Winemaking: Carried out with great care.
First, the harvest date is monitored,
followed by the temperatures during fermentation.
Only SO2 (sulfur) is used.
Clarification is achieved through filtration.
Wine storage and maturation take place
in stainless steel tanks.
Distillation: First, the material to be
distilled contains no SO2.
It is protected from oxidation.
During distillation, high temperatures are avoided
to prevent scorching, resulting in very clean aromas.
The aniseed: comes from Evia and is fresh.
In the second distillation, the "head" is removed—
this is where methanol is found, a substance that can
cause blindness or even death.
Then there is the "tail," the end of the distillation.
We keep only the middle section, known as the "heart."
Water: The water used to adjust the alcohol
content (to 42% vol) comes from a spring on Mount Olympus.
It is guaranteed to be free of chlorine and nitrates.
We believe we produce an excellent tsipouro (spirit).
